Delicious Roasted Red Pepper Dip

I recently had the pleasure of meeting film producer, Laurie David, at a talk for the fantastic documentary Fed Up. Like me, she believes in eating whole food, cooking with loved ones and limiting processed food. I liked her so much, I got her Family Cooks cookbook and that’s when I discovered this amazingly simple and delicious roasted red pepper dip. I don’t know about you, but I am an avid dipper. I love dipping veggies and crackers into something mouth-watering. My go-to is usually hummus, but this roasted red pepper dip is vying for that title. With only 4 ingredients and one step, it’s instantly one of my faves for home or entertaining. The fact that it is actually super good for you is just a bonus. I promise you, you will love it too.

Delicious Roasted Red Pepper Dip
 
Ingredients
  • 1 jar roasted red peppers (approx. 1½ cups)
  • ½ cup roasted almonds (finely ground)
  • 1 clove of garlic
  • 2 tsp red wine vinegar
  • Salt and pepper
Instructions
  1. Put everything into your blender and puree until smooth.
Tip: Buy raw almonds and pop em in the oven on 350 for a few minutes to roast at home. It’s much better than buying the pre-roasted, salted kind which are loaded with nasty oils and insane amounts of sodium. I can’t wait to hear how this worked out for you!
