How To Slice Cherry Tomatoes In A Snap

Tomatoes are a great source of antioxidant vitamins A and C and offer additional benefit when cooked as heating tomatoes breaks down the cell walls for easier absorption and also increases the availability of the wonderful, heart-healthy nutrient lycopene. I like to roast my tomatoes with a bit of coconut oil, salt and pepper and in the oven at 350 F until slightly shrivelled and a bit browned. So yummy!
