Roasted Garlicky Purple Cauliflower Bites

  • 1 head purple cauliflower
  • 2 tbsp melted coconut oil
  • 1 tsp garlic powder
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  1. Preheat oven to 450F and line baking sheet with parchment paper.
  2. Cut cauliflower into bite-sized pieces and add into large mixing bowl.
  3. Add salt, pepper + garlic powder and oil and mix well.
  4. Spread evenly on parchment-lined baking sheet and place on middle rack.
  5. Bake for about 20-25 minutes, stirring every 10 minutes to ensure even roasting.
  6. Remove once edges of cauliflower are brown and crispy.
  7. Notes: To make alternating skewers with white cauliflower, simply double the recipe using an extra head of white cauliflower.
