Strawberry Beet Smoothie

This smoothie is for those days you want a really bright, happy smoothie.

I’m also addicted to Janelle Monae’s song, Pynk, at the moment. So, I made this in honour of that. Kinda.

Is there anything better than when strawberries are finally in season? Deeply red and juicy throughout, as they should be. Strawberry shouldn’t be white! When it comes to the best berries for your bod, remember: the brighter the better!

Strawberries are incredibly high vitamin C to keep your skin firm and bright!

Yes, it’s really great to add greens to your morning smoothie, and I do that a lot. But, I also eat a lot of greens throughout the day, so when I have beets in the house, I like to add them to smoothies and dips to create that fiercely fuchsia hue we’ve come to know and love. It’s a great way to sneak extra veggies into your kid’s smoothies too without them turning their noses up at something that looks muddy or, heaven forbid, green.

Beets are an amazing source of potent antioxidants called betalains which works wonders at lowering your inflammation and keeping your immune system in check. They add a nice, earthy sweetness to this recipe which is balanced out by the super sweet, seasonal strawbs and the little kick of lime.

I used roasted beets here, but you can easily use raw, shredded beets too if you want.

Note: when adding beets to your smoothies for the first time, start small and work your way up to ensure a pleasurable taste experience.

Ingredients
  • 1 cup strawberries (fresh or frozen)
  • 1 banana
  • ½ cup coconut milk (unsweetened)
  • Juice of 1 lime
  • ¼ cup roasted beet
  • ¼ tsp vanilla extract
  • 1 tbsp nut or seed butter if desired
Instructions
  1. Add all ingredients to high speed blender and blend until smooth. Add more liquid for desired consistency.
