A little green treat to enjoy for breakfast or a tasty snack. I whipped these up in minutes because I had to use up the rest of a giant avocado before it went bad, so I whizzed up some kiwi lime mousse with avocado! (Cause you know how I love to blend). When it’s time to eat these bad boys, there’ll also be a generous handful of granola happening. But, you can top it with whatever your heart desires like: nuts, seeds, coconut chips, extra chopped fruits or berries.
- 1 ripe avocado
- 2 kiwi fruits
- 1 peeled lime
- 1 green apple
- ½ cup fresh spinach
- ¼ c hemp seeds
- Approx 1 c filtered water (or less, depending on how thick you want)
- Can add a medjool date or 1 tbsp maple syrup if more sweetness desired.
- Peel and chop fruits, add them to blender with remaining ingredients. Start with ½ c water puree until smooth and pudding-like consistency adding more water if necessary.
