Why buy store bought when you can whip this up in minutes and have the freshest salsa on the block? I love making my own salsa to bring to parties or just to have on hand in the fridge for adding to salads or rice bowls (and, yes, the occasional organic corn chip). It’s so hydrating and full of powerful antioxidants like vitamins A + C and lycopene plus a whack of other nutrients! Plus, it’s so freakin’ delicious it’ll impress all your guests who have no clue how easy it is to make.
- 4 plum tomatoes, finely diced
- ¼ red onion very finely diced
- 1 clove garlic minced
- juice of 1 lime
- 2 tbsp finely chopped fresh cilantro
- 2 tbsp finely minced
- ½ tsp sea salt.
- Add all ingredients in a bowl and mix well. Stores in an airtight container in the fridge up to a week!
