Chocolaty Whipped Avocado Mousse

Serves: 4-6 servings
  • 1 large ripe avocado (or two small/medium)
  • 5 medjool dates, pitted and soaked in hot water for at least 10 minutes
  • ½ cup raw cacao powder
  • 1 cup of full fat coconut milk
  • 2 tbps ground chia seeds
  • 1 tsp vanilla extract
  • Good pinch of sea salt
  1. Put all ingredients into a Vitamix or high speed blender and blend on setting 1 for about a minute.
  2. Once everything is combined, increase the speed to 2 for another minute, using the tamper to keep the mousse running smoothly.
  3. Finally, increase the setting to 5 and blend for another minute until super smooth and velvety.
  4. If too think, use additional coconut milk to thin.
