Serves: 1 loaf
  • 3 medium very ripe bananas (or 2 large)
  • 3 large organic eggs
  • 1 tbsp vanilla extract
  • 1 tbsp raw honey
  • ¼ cup avocado oil
  • 2 cups almond meal flour
  • 1 tsp baking soda
  • ½ tsp sea salt
  1. Preheat oven to 350F and line a standard-sized loaf pan with parchment paper.
  2. In a food processor, add wet ingredients: bananas, eggs, vanilla, honey and avocado oil. Pulse to combine.
  3. Pulse in dry ingredients: almond flour, baking soda and salt.
  4. Pour batter into lined loaf pan and bake on middle rack of oven for 55-60 minutes until browned on top and toothpick inserted into the middle comes out clean.
  5. Remove and allow to cool at least 10 minutes on a wire rack before slicing.
